Year in Flavor: Uptown & Humboldt's 2025 Recap

If 2025 had a taste, it would be bold, a little unexpected, and best enjoyed with friends. This year was about movement and about staying rooted in what matters most: community, curiosity, and damn good food.

From Puerto Rico-inspired sips to packed wedding dance floors, brunch lines at Mercury Café to Friendsgiving tables filled with familiar faces, 2025 reminded us why we do what we do. So let’s rewind the tape and relive a year that took us from Denver streets to Mediterranean coastlines and back again, one flavor trip at a time.

January: Back to Our Roots

We kicked off the year the way we love best: traveling with intention. January took us to Puerto Rico, reconnecting with Chef Gio’s roots and celebrating Hayden’s birthday along the way. It wasn’t just a vacation, it was an inspirational trip. Long meals, cultural deep dives, and flavors that would quietly shape menus all year long.

February: Rice Bowls & New Chapters

February brought something brand new to the Uptown lineup: rice bowls. Simple, nourishing, and endlessly adaptable, they became an instant favorite and a reminder that evolution doesn’t have to mean overcomplication. Sometimes it’s just about listening to what people crave and delivering it with care,  whether that’s lunch for a crew or catering for a full-scale event.

March: Brunch Becomes a Ritual

By March, brunch at Mercury Café wasn’t just an average pop-up. Weekend after weekend, we served brunch that felt equal parts cozy and celebratory, grounding our spring in consistency and collaboration. Mercury has long been a cultural cornerstone in Denver, and we’re proud to have been part of that energy.

April: Recognition & Momentum

Spring thawed into something big: another Best Food Truck win from Westword. Being recognized by our city again reminded us that staying curious and community-first never goes out of style. Denver’s food scene is stacked, and we’re honored to be part of it.

May: Music, Birthdays & Secret Coffee

May was joyful in every sense. Chef Gio’s birthday, the return of sunshine, and a Secret Coffee Party that blended music, movement, and morning magic. It was one of those moments that didn’t need explaining, you just had to be there. These are the gatherings that fuel us, the ones that blur the line between work and play.

June: Sip Your Way Through Summer

June was all about staying cool. As the heat rolled in, so did our lineup of house-made frescas with cucumber ginger lime, pineapple basil, as well as a Puerto Rican-style piña colada that quickly became the drink of the summer. We leaned into refreshment and celebrated our ongoing relationship with Civic Center Eats, a community we’re proud to cook alongside.

July: Mediterranean State of Mind

July took Uptown & Humboldt overseas. Albania, Spain, England for a month of Mediterranean flavors, family time, and creative reset. Travel has always been part of our DNA, and this trip reinforced what we believe deeply: the best ideas come when you step away, taste widely, and come back inspired.

August: New Waters

August marked a personal milestone for Chef Gio: becoming a certified yacht chef. It was a reminder that our work doesn’t live in one lane. From food trucks to private dinners to destination experiences, we’re always exploring new ways to bring hospitality wherever people gather.

September: Weddings, Community & Chosen Family

September was one for the books. Our biggest wedding month yet, filled with dance floors, cocktail hours, and menus crafted for once-in-a-lifetime moments. From intimate celebrations to full-scale receptions, weddings continue to be one of our favorite ways to show up for our community.

We also celebrated community wins by catering the opening of Yellow Rose Barbershop, supporting a friend’s dream brought to life, and stepping into a new role as godparent. These moments grounded us in why community matters.

October: Award Season

In October, we took home Judges’ Choice at the Best Bites Colorado festival, which is a nod to the craft, care, and creativity our team brings to every plate. Awards are sweet, but they’re even better when shared with the people who show up, line up, and keep coming back.

November: Friendsgiving & Fresh Looks

November slowed things down just enough to savor them. Friendsgiving brought together people from every corner of our lives, reminding us that food is the fastest way to turn strangers into family. We also debuted refreshed branding, our visual evolution that reflects where we’re headed while honoring where we’ve been.

December: Gratitude & Looking Ahead

As the year winds down, we’re filled with gratitude. For the regulars who chase the truck, the couples who trust us with their weddings, and the planners and partners who keep inviting us into meaningful moments.

2025 was a year of flavor, festivals, and forward motion. And 2026? We’re just getting warmed up.
